Chocolate Irish Cupcakes

 

Ingredients:

 

1 3/4 cups of Flour 

2 cups of sugar 

3/4 cups NEHF cocoa powder

1 1/2 tsp baking powder

1 tsp kosher salt

2 eggs

1 cup milk

1 cup of hot water

2 tsp vanilla extract 

 

Irish Cream Frosting:

 

2 sticks of butter (room temperature)

3 tbl Irish cream liqueur

2 tsp vanilla extract

4 cups powdered sugar 

 

 

Steps:

Prep Time: 15 minutes bake Time: 20-25 Min Serves: 12

 

1. Preheat over to 350 degrees. In a medium bowl, mix all of the dry ingredients until combined.

 

2. Add the eggs, milk and vanilla extract and mix for 2 minutes. Add hot water and mix for another 2minutes.

 

3. Fill 2 1/2" cupcake paper cups 2/3 full.

 

4. Bake 20-25 minutes or until a toothpick comes out clean. 

 

5. Set aside and cool before frosting.

 

6. Irish Cream Frosting: Mix the butter, vanilla extract and Irish cream Liqueur until combined.

 

7. Slowly add in the powdered sugar 1 cup at a time until smooth.

 

8. Frost using your favorite piping tip (Wilton 2d is used in photo).
